Description
Developed by the Romans and brought to Portugal two thousand years ago, the carved wine is, today, the greatest symbol of the Alentejo, a region that has been able to preserve this traditional winemaking process. A know-how that has passed from generation to generation, according to the flavor of history and its events, establishing a cultural heritage of its own, which must be preserved and included in the cultural legacy of the region of Vidigueira, the heart of Carved Wine.
This technique of making wine in large clay pots, the amphorae or talhas, has survived the centuries and, because of its simplicity and naturalness, has long been integrated into the daily lives of Alentejans. Any farmer with a vineyard, no matter how small, could not do without his own clay “talhinha” (or little pot) to make wine for personal consumption and to give to friends to taste.
This production method is rooted in the cultural customs of the Vidigueira region and in the habits of the people of the Alentejo. At the end of a day’s work, the custom of going to the tavern, a place to meet, “sing” and chat, to socialize and drink a glass of this nectar, remains practically untouched.
Mud and granite wine was on the verge of disappearing, but in the last decades it has gained more prominence among consumers, and more and more producers are betting on this fermentation technique made 100% in clay pots – each one inserting its own variations, according to local tradition and personal taste.
